While I am getting advice from the list, I'd appreciate suggestions for an
appropriate device for recording natural spoken conversations---some small
portable recorder that can be left to record for a couple of hours. (I assume
that the price would be around $1000).

I will summarise responses along with the comments from list members on
feasibility of using off-the-shelf voice-recognition software to aid
transcription.

I am asking these questions at the moment because I am teaching a Corpus
Linguistics course, which will involve some student projects. I should
also mention that now would be a good time to send
additions/suggestions/corrections for the Corpus Linguistics page:
www.ruf.rice.edu/~barlow/corpus.html

I may also reorganise the page. It has a pretty flat structure, which may
make it slow to load.
